Gluten/Corn/Soy/Sugar Free
I live in a gluten-full house, I'm the only one that has been blessed with allergies so I almost always have to prepare separate meals especially desserts. I am on the SCD diet to help with my Ulcerative Colitis, it's basically Paleo with a few differences. So as a 3rd generation chocoholic and sweets lover I have had to be very creative with the things I eat. (I have made cookies from puréed chicken...but that's a story for another day) lately I've come up with quick desserts that I can make in a few minutes that is just one serving size for me that can be cooked in the microwave, on the stove or in the oven depending on how much time you have or the outcome you want. I call these concoctions Micro Cakes.
Pumpkin Pancakes
1 tbs egg white protein
1 tbs cashew butter
1 tbs honey
2 tbs pumpkin purée
5 pecans, chopped
Sprinkle of salt
1 egg white
1 tsp cinnamon
1 tsp ginger
Add all ingredients together stir til combined. Heat skillet on med heat with butter or coconut oil. Fry cakes til pancake like.
