Paleo Cheese Enchiladas

SPaleoTortillas yields 4
1/4 cup egg white protein
1/8 cup coconut flour
1/8 cup fava bean flour
1 egg white
Salt and garlic powder, to taste
2 tbs water
Heat a non stick pan on med-high heat. Mix all ingredients together and spoon about 1/4 of the batter on to the hot pan, using the spoon spread the batter around into a flat circle. Once it starts looking done, about 2 minutes, flip over. it's better to not let get them get brown, because that will make them stiff and they won't be able to roll up properly. Then flip and cook on the other side about a minute. 

To make cheese enchiladas 
I used 
cheddar cheese 
Queso fresco 
Yogurt, unsweetened ( you could also use sour cream)

I melted some cheddar and yogurt with garlic powder and cayenne for the cheese sauce that goes on top 
and just filled them with cheddar and queso fresco
Bake  for 10-15 minutes
I ate mine with black beans weigh peppers and onions! ¡Muy delicioso!
